Sticky Sesame Cauliflower and Chickpeas

Ingredients
- 3 teaspoons Fustini's Sesame oil
- 1 tablespoon Fustini's Peperoncino Garlic Crush olive oil
- 1 tablespoon Fustini's Ginger Crush olive oil
- 2 teaspoons freshly grated ginger
- 3 garlic cloves, minced
- ½ red pepper, sliced into thin strips
- ¼ cup tamari or soy sauce*
- 1/3 cup honey or maple syrup**
- 2 tablespoons Fustini's 12 Year White balsamic
- 2 teaspoons cornstarch
- ¼ cup cold water
- ½ cup rice flour
- 3 tablespoons corn starch
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- ½ cup water
- 2 teaspoons Fustini's Sesame oil
- 1 head of cauliflower, chopped into equal size large florets
- 1- 16 oz can of chickpeas, drained and rinsed
- sesame seeds (for garnish)
- scallions (for garnish)

Directions
- Cauliflower: Preheat oven to 400 degrees F. Line a baking sheet with parchment. In a medium bowl, add the dry ingredients for the batter and whisk. Add the wet ingredients and whisk until smooth (you may need to add more water as you go as this batter thickens quickly).
- Dip the cauliflower in the batter one piece at a time and shake off excess. Place dipped cauliflower on parchment without touching. Bake for 30 minutes.
- Sticky sesame sauce: Heat a skillet over medium heat. Add sesame oil, olive oils, garlic, ginger, and red pepper. Sauté, until the pepper starts to get slightly soft. Add the soy sauce, balsamic vinegar, honey and bring to a boil. Whisk cornstarch into the water and add this slurry to the pan. Bring to a boil to thicken, add chickpeas, then remove from heat.
- When the cauliflower is done, remove it from the oven and carefully stir each piece into the sticky sauce until all florets are coated. Serve with wild rice or noodles. Sprinkle with sesame seeds and scallions***
Recipe Note
*If you are making this dish gluten-free, make sure you use the gluten-free tamari **I prefer honey, but if you are making this dish vegan, use maple syrup. It is equally delicious. ***If making the dish gluten-free lettuce wraps are super yummy too!
