Strawberry Avocado Salsa with Salmon

Ingredients
- 2 cups strawberries, hulled and chopped
- 1 large avocado, diced
- 1 shallot, minced
- 1/2 teaspoon lime zest
- 1/4 cup chopped cilantro
- 1/2 teaspoon finely minced jalapeno
- juice of 1/2 a lime
- Fustini's Jalapeno Lime balsamic
- pinch of Kosher salt
- 4 - 6 oz salmon filets
- 2 tablespoons Fustini's Persian Lime olive oil

- Mix together strawberries, avocado, shallot, lime zest, cilantro and jalapeno. Dress with lime juice and season to taste with a drizzle of balsamic and a pinch of salt. Refrigerate until ready to use.
- Pat salmon filet dry and season with salt and pepper. Heat a 12" skillet over medium-high heat. Add olive oil to the pan.
- Once the oil is heated, add salmon filets (skin-side down if any). Press down on each fillet with a spatula for 20-30 seconds to make sure the filet sears evenly. Cook for 5 minutes (based on filet thickness). Turn and continue cooking until the filet is firm and pink. Serve topped with salsa. Alternatively: Cook on a heated grill.
Recipe Note
For more heat, substitute Fustini's Chipotle or Aji Verde Crush olive oil. Adapted from "Season to Taste"
