Strawberry Fennel Salad

Ingredients
- 1 shallot, minced
- 1/2 teaspoon Dijon
- 1/3 cup Fustini's Sicilian Lemon balsamic
- 2/3 cup Fustini's Delicate SELECT olive oil
- 2 cups hulled and sliced strawberries
- 2 fennel bulbs, cored and thinly sliced
- 1 tablespoon fennel fronds, finely chopped
- 2 tablespoons finely chopped mint leaves
- 1/4 cup toasted pepitas

- In a medium bowl, combine shallot, mustard and vinegar with a pinch of salt. Whisk together. While whisking, add olive oil to the vinegar in a thin stream to form a creamy emulsion. Taste and adjust with additional salt, vinegar or olive oil
- Combine strawberries, fennel, fennel fronds and mint in a medium bowl. Toss together and toss with dressing. Sprinkle with toasted pepitas and serve.
