Ingredients
- 1 large onion, diced
- 1 pound lean ground beef
- 1 tablespoon Fustini's Garlic Olive Oil
- 1/4 cup Fustini's Thyme balsamic
- 1 (14.5 oz) can of diced tomatoes
- 1 1/2 cup packed fresh spinach
- 2 teaspoons Fustini's Tuscan spice blend
- 6 large green peppers, halved lengthwise, seeded, pith removed
- 2 cups cooked rice (or cauliflower rice)
- 4 oz goat cheese, softened
- salt and pepper
- 1 1/2 cup grated Asiago cheese

- Heat Garlic olive oil in a sauté, pan. Cook onions until translucent add beef and cook until done. Add balsamic to deglaze the pan. Add tomatoes, spinach and Tuscan Spice blend.
- Take sliced pepper and place 1/3 cup of cooked rice in the bottom, top with a dollop of goat cheese. Add meat mixture, season with salt and pepper and top with Asiago cheese. Bake on a sheet tray for 20-30 minutes until cheese is melted.
