Summer Market Salad with Corn Vinaigrette

Ingredients
- 4 ears of corn, shucked and cut off the cob
- 1/2 head green cabbage, finely shredded
- 3 to 4 multicolored carrots, finely chopped
- 1 red bell pepper, seeds, and ribs removed, finely chopped
- 1 bunch of scallions, white and light green parts finely chopped
- 1 bunch of chives, finely sliced
- 1 cup red cherry tomatoes, halved lengthwise, cut into thirds
- 1 cup yellow cherry tomatoes, halved lengthwise, cut into thirds
- 2 cloves garlic
- 1/4 cup Fustini's Tuscan Herb olive oil
- juice of 2 lemons
- 2 tablespoons Fustini's Sicilian Lemon balsamic
- 1 teaspoon garlic powder
- Kosher salt & freshly ground black pepper
- 1/4 teaspoon ground turmeric
- corn tortilla chips, for serving

- in a large bowl, toss all but 1/2 cup of the corn, cabbage, carrots, bell pepper, scallions, chives, cherry tomatoes, and tomatoes to combine.
- In a high-powered blender, blend reserved 1/2 cup corn, garlic, olive oil, lemon juice, balsamic, garlic powder, kosher salt, pepper, and turmeric until smooth. Pour dressing over salad and toss to combine. Serve with chips alongside.
Recipe Note
A great recipe to add fresh produce from your local farmers market, or veggies that need to be used from your refrigerator. Substitute your favorite olive oil and balsamic. Adapted from delish.com.
