Ingredients
- 2-3 onions, peeled & sliced
- Fustini’s Butter olive oil
- 1 sheet frozen puff pastry, thawed
- little flour for dusting
- ½ cup Fustini’s Balsamic Onion Jam
- 1/4 cup grated Parmesan
- 1 cup grated gruyere
- 2 large eggs
- 1/8 teaspoon freshly grated nutmeg
- Kosher salt and freshly ground pepper
- 2 teaspoons Fustini's Meyer Lemon olive oil
- 1/2 teaspoon grated lemon zest

- Preheat the oven to 400 degrees F. Sauté, the sliced onion in olive oil until caramelized, set aside.
- Unfold puff pastry, rolling if needed. Cut into smaller rectangles for tarts as desired. Trace a border for the crust, scoring the line halfway through by dragging a sharp knife. Prick the center with a fork. Bake for about 12-15 minutes allowing the crust to rise and brown. Let cool slightly on the baking sheet.
- Meanwhile, mix the cheeses, eggs, milk, nutmeg and a pinch each of salt and pepper in a bowl until combined. Smooth dabs of Onion Balsamic Jam on bottom of crust. Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides. Arrange caramelized onion on top of the cheese mixture. Bake until the cheese mixture is slightly puffy, 15 to 20 minutes. Sprinkle with the lemon zest and a quick drizzle of Meyer Lemon olive oil. Serve warm or at room temperature.
