Tortellini With Italian Sausage Marinara

Ingredients
- 1 pound Italian sausage
- 1 large onion - small dice
- 1 red pepper - fine dice
- 1 tablespoon Fustini’s Garlic Olive Oil
- 1 28-ounce can crush tomatoes or 3-4 cups fresh tomatoes
- 1-6 ounce can tomato paste
- 1 cup red wine
- 1/4 cup Fustini's Thyme balsamic
- 1 1/2 tablespoons Fustini's Tuscan Herb spice blend
- 1 bag, fresh tortellini
- Parmesan cheese

- Cook sausage in a medium-size pot over medium-low heat until fully browned and all liquid is gone, 15 to 20 minutes. Add onion, red pepper and Fustini&rsquo,s Garlic Olive Oil and cook for another few minutes stirring frequently. Add the tomatoes, paste, wine, balsamic and spice blend and bring to a simmer. Turn the heat to low and simmer sauce until slightly thickened, about 45 minutes.
- Heat 4 quarts water in a large pot and add a hand full of salt. When rolling, add the tortelloni and stir well. Turn the heat to medium and cook pasta, stirring three more times, for 8 minutes. Drain well and add a little of the sauce to the drained pasta and stir to coat. Serve with a little more sauce over the top and a sprinkle of Parmesan cheese.
