Traverse City Cherry Balsamic Onion Jam

Ingredients
- 2 tablespoons butter
- 2 cups finely shaved onion
- Kosher salt & freshly ground black pepper
- 3 garlic cloves, grated
- 1/4 cup Fustini's Traverse City Cherry balsamic
- 1 cup frozen cherries
- 1/4 teaspoon ground cardamom

- Melt butter in a pan over low heat and add onion, garlic, salt, and pepper to taste. Continue to cook over low heat, stirring frequently, until extremely soft and beginning to caramelize. About 30 minutes.
- Add in the balsamic, cherries, and cardamom and cook until all liquid has evaporated about 20 minutes. Remove from heat and cool. Store in refrigerator until ready to use.
