Truffle Marinated Mushrooms

Ingredients
- 4-5 tablespoons Fustini's Medium SELECT olive oil
- 2 garlic cloves, halved lengthwise
- 1 pound small button or mini-bella mushrooms, stems removed
- 1/4 cup fresh Italian parsley, chopped
- 1 teaspoon fresh tarragon, finely chopped
- 1 tablespoon fresh chives, finely chopped
- 1 tablespoon Fustini's Sicilian Lemon balsamic
- 1 tablespoons Fustini's White Truffle Oil
- salt and pepper to taste

- Heat Fustini's SELECT olive oil in a large, heavy skillet over medium-low heat. Add garlic and sauté, until golden, about 5 minutes.
- Discard garlic. Increase heat to medium and add mushrooms. Sauté,, stirring often, until mushrooms are golden, about 4 minutes. Reduce heat to low. Stir in remaining ingredients. Cover and simmer for 5 minutes. Season with salt and pepper to taste. Cool and transfer to a container, cover and chill until cold. Before serving, drain mushrooms and skewer on toothpicks.
