2 lbs. ground turkey
- 1 yellow onion, small dice
- 2 large carrots, small dice
- 3 cloves garlic, sliced

1 jalapeño, minced
- 1 red pepper, small dice
- 1 cup corn
- 1 tablespoon cumin
- 1 tablespoon coriander
- 2 tablespoon chili powder

1 - 28oz can diced tomatoes
- 3 cups chicken stock
- 3 bay leaves

1 - 15 oz can black beans, drained and rinsed

1 - 15 oz can red kidney beans, drained and rinsed
- shredded cheddar cheese
- sour cream
- fresh cilantro, chopped
- lime wedge
Garnish
Directions
Heat Gremolata olive oil in a pot and add ground turkey. Cook, breaking up the meat, until golden brown and cooked through. Remove cooked turkey to a plate.
In the same pan used for the turkey, add onion, carrot, garlic, jalapeño, red pepper, and corn. Sauté until tender, then add spices, tomatoes, stock, bay leaves, and beans. Bring to a simmer and add back the turkey.
Simmer chili for at least 15 minutes. Portion into bowls and top with garnishes.
