Ingredients
- 1 chicken breast
- 1 tablespoon Fustini's Basil Crush olive oil
- 1 bunch Romaine lettuce, sliced
- 1/2 cucumber, thinly sliced
- 1 bell pepper, julienned (red, yellow, orange or purple)
- 1 tomato, sliced
- 1 tablespoon fresh basil, chopped
- Pine nuts
- 1 tablespoon wholegrain mustard
- 1/2 tablespoon Fustini's Meyer Lemon olive oil
- 1 tablespoon Fustini's Citrus Oregano balsamic
- salt and pepper to taste
Herb Lemon Vinaigrette
Directions
- Heat Fustini's Basil olive oil over medium heat. Sauté, chicken breast until done. On a plate, layer romaine lettuce, cucumber, bell pepper and tomato. Slice cooked chicken and place on top of the salad. Top with Herb Lemon Vinaigrette, fresh basil and pine nuts.
- Combine mustard and Fustini's balsamic. While whisking, slowly add the olive oil to emulsify. Season with salt and pepper to taste.
Recipe Note
Use leftover grilled or cooked chicken for a great way to add some protein to this easy salad.
