Ingredients
- ½ bag frozen corn, thawed, 2 – 3 ears of fresh corn, roasted and cut off cobs
- 15 oz can of black beans, drained and rinsed
- ¾ cup medium red onion, diced
- 3 Roma tomatoes, diced
- 1 – 1 ½ limes, juiced
- ¼ cup Fustini's Persian Lime olive oil
- 1 tablespoon salt
- 1/2 teaspoon black pepper

- Mix all ingredients together, add salt and pepper to taste, and serve.
Recipe Note
For more intense heat, substitute a Fustini's spice-infused olive oil.
