BLT Pasta Salad

Made with Basil Crush olive oil and Citrus Oregano balsamic vinegar, this easy dish is easy to pull together.
Ingredients
- 1 pound pasta (rigatonio, mostacoli or farfalle)

3 tablespoons Fustini's Basil Crush olive oil, plus more for drizzling
- 1 small onion, finely chopped
- 1/2 cup white wine

- 4 tomatoes, seeded and chopped
- 1/2 pound sliced bacon, cooked and drained
- salt and pepper to taste
- 1/4 cup fresh basil, coarsely chopped
- 2 cups coarsely chopped fresh spinach
- 3/4 cup Romano cheese, grated
Directions
- Cook pasta according to package directions until al dente, drain.
In a medium saucepan, heat the olive oil over medium heat. Add onions and cook until softened. Add wine and balsamic and cook for 1 minute. Add tomatoes and season with salt and pepper to taste. Simmer the sauce on low for 15 minutes until the liquid is absorbed, stirring frequently.
- In a large bowl, combine pasta with tomato sauce. Add bacon, basil, and spinach, and toss. Drizzle with olive oil and garnish with grated cheese.

You can enjoy this salad warm or cold.
