- 2 tablespoons Fustini's Chipotle olive oil, plus more for drizzling
- 1 cup medium onion, diced
- 1 cup red and green bell pepper, diced
- Kosher salt & freshly ground black pepper
- 4 boneless, skinless chicken breasts
- 1 cup shredded cheddar
- 4 tablespoons Cajun seasoning, divided
- 1/2 cup sour cream
- 1 tablespoon Homestyle Sriracha
Directions
- Preheat oven to 350°,. In a large ovenproof skillet over medium heat, heat olive oil. Add onions and peppers and cook until soft, 5 minutes. Season with 2 tablespoons of cajun seasoning, salt and pepper. Remove from heat and let cool slightly.
- With a sharp paring knife, create a pocket on the side of each chicken breast. Stuff each with vegetable mixture, then top with 1/c of the cheddar. Close the pocket and season the chicken all over with Cajun seasoning, salt, and pepper, and top with remaining cheese.
- Add chicken to the same skillet and bake until cooked through about 25 minutes. Meanwhile, combine sour cream and sriracha. Serve sauce over or alongside cooked chicken.
Recipe Note
You can step up the heat with this easy weeknight chicken recipe. For more heat, substitute Fustini's Cayenne Crush or Peperoncino Garlic Crush olive oils. Adapted from delish.com
