Cheddar Apple Phyllo Cups

Ingredients
- 2 large tart cooking apples, peeled, cored, and chopped
- 1/2 cup chopped onion
- 1/4 cup Fustini's Michigan Apple
- 1/4 cup brown sugar
- 1 tablespoon orange peel
- 1 tablespoon grated fresh ginger
- 1/2 teaspoon ground cinnamon
- 1 pk (15 count) phyllo shells
- 1 1/2 cups shredded cheddar cheese

- In a medium saucepan add chopped apples, onion, vinegar, brown sugar, orange zest, grated ginger and cinnamon. Stir to combine. Heat on high to bring to a boil. Reduce heat to low and simmer, covered, for about 40 minutes. Remove lid and simmer uncovered to reduce the liquid volume to desired consistency.
- Preheat oven to 350. Line a baking sheet with parchment paper. Fill shells with apple mixture and place on prepared baking sheet. Top with cheese and bake 10-12 minutes until cheese melts.
