Cucumber and Smoked Salmon Bites

Ingredients

1 large English cucumber

4 ounces plain cream cheese (½ block)

4 ounces smoked salmon

1 tablespoon Basil Crush olive oil

1 teaspoon Citrus Oregano white balsamic

¼ teaspoon Sesame Seed oil

salt and pepper to taste
Directions
Prepare the salmon cream cheese mixture by tearing salmon into very small pieces with your fingers or a fork and combining with softened cream cheese, olive oil, sesame oil, balsamic vinegar, salt & pepper. Adjust seasoning to taste and chill in the refrigerator for at least 30 minutes.
When you’re ready to assemble and serve, slice the cucumber lengthwise with a mandolin or vegetable peeler, resulting in at least twelve 1/8” thin strips. Do not use the very narrow strips from the edge of your cucumber. Lay your strips out on a cutting board and pat dry.
Using the back of a spoon, apply approximately 2-3 teaspoons of the cream cheese mixture to a cucumber strip, spreading it evenly along the length of the cucumber.
Starting at one end, roll the cucumber evenly and stand vertically. The cream cheese mixture helps to hold this together, but you can use a toothpick if desired. Serve immediately!
