Lemon Poppyseed Muffins

Meyer Lemon olive oil brightens this cheery muffin recipe.
Ingredients

2 cups flour

2 teaspoons baking powder

1 teaspoon salt

2/3 cup sugar

¼ cup poppy seeds
-
2 eggs
-
2/3 cup milk
-
⅓ cup Fustini’s Meyer Lemon olive oil
Directions
Preheat oven to 375° F and line a muffin tin with paper cups.
In a large bowl, mix together the flour, baking powder, salt, sugar and poppy seeds. In a small bowl, mix together the egg, milk and Meyer Lemon olive oil. Add the wet ingredients into the dry ingredients and mix until just combined. Pour batter into lined muffin tins and bake 15-20 minutes until lightly golden brown.
