Peach, Ginger, and Tomato Compote

Full of flavor, this compote makes a great addition to your cheese board, grilled chicken, or burgers.
Ingredients

2 tablespoons Ginger Crush olive oil

2 tablespoons fresh ginger, grated

1 yellow onion, small diced

2 cups cherry tomatoes, chopped

2 cups fresh peaches, chopped

½ cup water

1 tablespoon agave

Kosher salt

1 tablespoon Peach balsamic
Directions
In a skillet over medium-low heat, add the olive oil and the onion. Stir often, cooking until the onions are soft and translucent, about 5 minutes. Add the tomatoes and peaches and stir well, cooking for a few minutes until soft. Add the water and scrape up anything sticking to the bottom of the pan. Add a lid to the pan and turn the heat to low, simmering for about 20 minutes. Remove the lid and add the vinegar, grated ginger, and the agave. Turn the heat up to medium-low and let cook with no lid for 10 minutes. Stir often while the mixture thickens as it cooks down. Season to taste with kosher salt and then let the compote cool. If desired, blend some of the compote in a food processor for a smoother texture.
