Savor the flavors of fresh peaches and fresh tomatoes with this easy go-to salad. Topped with a vinaigrette made with Basil Crush olive oil and Citrus Oregano balsamic vinegar, this is sure to be a summertime favorite.
Ingredients
- 4 cups bread cubes

- 1 cup cherry tomatoes, sliced
- 3 peaches, thinly sliced
- 8 ounces burrata cheese
- 1 handful of fresh basil leaves
- 3 cups fresh greens of choice
- 1 cup tightly packed basil leaves
- 1 garlic clove, minced

1 1/2 tablespoons Fustini's Citrus Oregano balsamic
- big pinch of kosher salt and pepper

Vinaigrette
Directions
- Preheat the oven to 350 degrees F. Place the bread cubes on a baking sheet and drizzle with olive oil. Bake for 10 to 15 minutes, until they are slightly toasty.
- Add all the vinaigrette ingredients to a blender or food processor and blend until smooth.
- When the bread is finished, place the salad greens on the bottom of a large platter for serving. Add bread cubes, and drizzle on some of the basil vinaigrette - about 2 to 3 tablespoons - and toss well. You want it to soak into some of the bread!
- Add the peach slices and the cherry tomatoes, and drizzle with more vinaigrette. Add the burrata on top, then do another drizzle of vinaigrette. Top with fresh basil leaves and serve!
Recipe Note
Substitute options would be citrus-infused olive oil and Peach or Mango balsamic or Iron Fish Honey vinegar. Adapted from howsweeteats.com
