- 2 cups watermelon, skinless, seedless, small dice
- 1/2 cup jicama, peeled and very small dice
- 1/2 cup honeydew melon, small dice
- 1/2 cup cantaloupe, small dice
- 1/4 cup red onion, minced
- 1 jalapeno, seeded and minced
- 2 tablespoons cilantro, chopped
- juice of 1 lime
- 1 tablespoon Iron Fish Bourbon Maple Syrup
- 2 tablespoons Fustini’s Jalapeno Lime balsamic
- 1 tablespoon Fustini’s Cilantro and Onion EVOO
- salt and pepper
Directions
- Place watermelon, jicama, honeydew, cantaloupe, red onion, jalapeno, and cilantro in a large bowl and stir to combine. Whisk together lime juice, maple syrup and vinegar. While whisking, slowly add oil to emulsify. Season with salt and pepper and pour over fruit. Stir to coat and serve.
